When all else fails, follow the directions.

I've been selling this excellent scone mix by Moreish Treats.  All you have to add is a cup of heavy cream, which means, you know, WHIPPING CREAM.  The recipe very clearly instructs you to use the heavy cream and NOT to make substitutions.  In spite of this clear warning, adventurous devil-may-care customers of mine have bravely substituted half & half.  What a surprise, the consistency of the scones was very, very bad.  They were so disappointed.  So they returned to buy more scone mix.  They're already hooked.  Try the cranberry tango next.  Yum.
