Mashed Potatoes with Peanut Better

3 lbs potatoes, peeled and cubed
3/4 cup Onion Parsley Peanut Better
1/2 cup olive oil
1/4 cup chopped fresh parsley
Salt and pepper to taste

Cover potatoes with salted water and simmer until soft, about 25 minutes. Drain water and mash potatoes with a potato masher. In a separate bowl, whisk together the olive oil and Peanut Better until smooth and runny. Add Peanut Better mixture to potatoes and mix well. Add salt and pepper to taste and blend in fresh parsley. Serve immediately.
