Spicy Peanut Better Croutons

1 loaf French or sourdough bread, cut into 1" cubes
3/4 cup Spicy Southwestern peanut butter
2 tablespoons olive oil

Preheat oven to 350 F. In a blender or food processor puree peanut butter with olive oil until smooth and runny. Toss bread cubes with Peanut Better until coated on all sides. Bake in oven 15 - 20 minutes and cool completely. Serve as snacks or in your favorite salads
